Fantastic Food Friday: Mom's Potato Salad
3 cups potatoes, diced (I prefer red/new potatoes)
Add-ons: diced hard boiled egg; couple sliced green onions; couple sliced celery stalks; diced pickles/relish; basically anything you like in your potato salad.
1/2 cup mayonnaise
2 tablespoons oil
1 teaspoon vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon prepared mustard
1/4 teaspoon sugar
Cook potatoes in boiling water till cooked through but still firm. Cool completely. Mix up the dressing ingredients. Fold dressing into potatoes (and any add-ons you included). Sprinkle with paprika. I like to chill it again for 15-20 minutes before serving.
