Ingredients:
3/4 cups flour
3/4 teaspoons baking powder
3/4 cups milk
1 egg, lightly beaten
1/2 cup shredded mozzarella cheese
1/2 cup pepperoni
1 teaspoon Italian seasoning
1/2 cup pizza sauce (marinara or spaghetti)
Preheat oven to 375. Spray 24 cup mini muffin pan (I doubled the recipe and used regular sized muffin pans).
In a large bowl, whisk together the milk and egg. Add the flour and baking powder and whisk until there are no clumps. Add the Italian seasoning. Stir in the mozzarella and pepperoni. Allow to rest for about 10 minutes. Stir batter well and divide among the muffin cups.
Bake until puffed and golden, about 20 minutes. Serve with warmed pizza sauce for dipping. (I sprinkled a little Parmesan cheese on top while they were cooling.)

These were really good. I plan to make up a ton more and freeze them for snacks. Cam had a suggestion of adding a dollop of the pizza sauce to the batter before cooking. I'll try that next time I make these.
EDIT: scored with the dollop of pizza sauce in the batter before cooking! I used a regular sized muffin pan and just a teaspoon of sauce on each. The sauce sinks a little during cooking so is incorporated nicely in the puff.

These are great Maria and freeze really well. I keep a batch in the freezer for the boys to warm in the microwave for snacks.
