1 can black beans, rinsed and drained
2 cups frozen corn
1 small red bell pepper, chopped
1/2 red onion, chopped (I omitted this for the boys)
1 1/2 teaspoons cumin
Juice of 1 lime
2 tablespoon olive oil
Salt and Pepper to taste
Combine and let stand 15 minutes. Toss and serve. I topped some grilled pork chops with this...yum!
