Fantastic Food Friday: Chocolate



Whenever I bake I always have one or more helpers.

We also made up a couple loaves of banana bread too (hence the nasty looking bananas on the counter behind Ian).








Chocolate Saucepan Brownies

Ingredients:
2/3 cup oil
4 squares of unsweetened baker's chocolate
2 cups of sugar *
1 1/3 cups flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup chopped nuts (optional)
2 teaspoons vanilla

Melt chocolate in saucepan over low heat, stirring frequently. Add oil. Beat in sugar. Add eggs, one at a time, mixing thoroughly after each one. Stir in flour, baking powder, and salt, blending well. Stir in nuts and vanilla. Pour into greased 13X9 pan. Bake at 350 for 25-30 minutes. Cut into squares immediately. Then cool.

* I've substituted Splenda (or similar sugar substitute) for the sugar before with more cake like results.

I'm likely bias, but these are the best brownies in the world, LOL -- yummy, yummy in the tummy!


For my birthday last week I made up this:


Double Chocolate Fudge Cake
(aka Death by Chocolate Cake)

Ingredients:
1 chocolate fudge cake mix
1 small package instant chocolate pudding mix
4 eggs
1/2 cup warm water
1/2 cup oil
8 ounces sour cream
12 ounce package chocolate chips (for fun try mint, butterscotch, etc.)


Mix everything together, place in well greased bundt pan. Bake at 350 for 45 minutes. Garnish with sprinkled powdered sugar. Serve with lots of milk, LOL, this baby is RICH.
