Mini Baking Day

Not sure what my motivation was today but I was a baking fool all day.

It all started with waffles for breakfast. I made up a double batch so I could freeze some. That way the boys could take them out over the course of the week, warm them up, and instant breakfast. I've read all over the place that a good way to reduce fats is to substitute applesauce for half the called for oil/butter so I gave it a try with the waffles. I also added a bit of cinnamon for a nice apple-cinnamon taste. Loved them. The only thing was they seemed to need to cook longer and were harder to remove from the iron. I'll have to play with that a bit.


Next up...apple-raisin muffins. Mini-sized for snacks. Another hit LOL we already ate the entire batch. Something I'll have to double or triple next time.


And the bread for tonight's dinner of Lasagna -- YUM!



And who knew it was National Pie Day yesterday? Not me, the pie queen, that's for sure. It's on my calendar now though and boy will my house smell good come January 23, 2010!
